Instant Pot Chicken Breasts
One of the first things I made in my Instant Pot was chicken breasts. That was 2 years ago and to this day I will rarely if ever cook chicken another way. The chicken always comes out juicy and tender, perfect for rice bowls, tacos, or chicken pot pie.
What you'll need:
- Instant Pot
- Steam rack
- Measuring cups and spoons
- Water or broth
- Seasonings to taste
Depending on what you plan to use this recipe in, that will determine if seasonings should be added. For example, if you were using it for enchiladas you might want to add paprika, cumin, and chili powder. If the dish is Italian, try adding thyme, oregano, and basil.
When it comes to choosing between water or broth, water will work just as well as broth. It really comes down to what you have on hand.
How to cook:
Press the polutry button and set the timer for 10 mins for fresh or 15 mins for frozen.
Once the timer goes off, allow to naturally release for 5 minutes
then do a Quick Release
Ingredients:
- 2 Chicken breasts
- 1 cup Broth or water
- ½ tsp Salt (optional)
- ½ tsp Pepper (optional)
- 1 Bay leaf (optional)
Instructions:
- Add the broth (or water) and bay leaf to the inner pot. Next place in the steam rack, setting the chicken on top. Season the chicken with salt and pepper.
- Close the lid and make sure the vent on top is turned to sealing.
- Press the poultry button and set it for 10 minutes for fresh or 15 minutes for frozen.
- Once the time is up, allow to release naturally for 5 minutes. After the 5 minutes do a quick release.
- Remove chicken from Instant Pot and enjoy!
Notes:
Cooking more then two pieces of chicken at a time is possible. You can cook as many or as little that will fit in your Instant Pot in a single layer.
